For the sauce:
4 tbsp. tamari
3 tbsp. smooth peanut butter 3 tbsp. honey
1 tbsp. rice vinegar 2 tbsp. olive oil
1 tsp. sriracha
¼ tsp. paprika
¼ tsp. garlic powder
To serve:
14 oz. (400g) cooked shredded chicken breast
1 red bell pepper, diced 1 head romaine lettuce
¼ cup (50g) peanuts, roasted 4 green onions, sliced
WHAT YOU NEED TO DO
Place all the sauce ingredients into a large bowl and whisk until well combined. Add the shredded chicken and diced bell pepper and toss to coat in the sauce.
Serve the chicken mixture in a lettuce wrap, and top with peanuts and green onions.
